Homemade French Upside Down Apple Tart

10 inch cast iron skillet or round pan

8-10 gala, pink lady or any high acid firm apple with a hint of sweetness, peeled, cored, and halved

1/2 cup salted butter

1/2 cup sugar

1 Tsp. vanilla or 1 vanilla bean, seeds extracted

1 recipe pie crust, rolled out to 1/8 inch thick.

 

Pie Crust

 

(This is a double crust recipe. Refrigerate or freeze the extra for future use)

2-1/2 cups flour

8 oz. butter (2 cubes)

1 tsp. salt

3 tbsp. sugar

1/4-1/2 cup ice water

 

Maple Whipped Cream

 

1 cup heavy cream

3 tbsp. maple syrup

1 tsp. vanilla

 

Pie crust directions

In a food processor or using your fingertips, combine the flour, sugar, salt and butter until the chunks of butter are combined to the size of peas. Add the first 1/4 cup of water and mix until the dough comes together easily. The crust will clump and fall apart if it is too dry. Add an additional two tablespoons of water and mix well, add more water careful not to add too much as you do not want to add more flour! Split the dough into two balls and place them on two sheets of plastic wrap. Loosely wrap up the ball and press down, smashing the ball into a disc about an inch thick. Refrigerate for 30 minutes.

 

Maple Whipped cream directions

Combine all ingredients in a bowl and whip with a whisk or a hand mixer until soft peaks form. Refrigerate until needed.

 

French Upside down apple tart directions

Preheat oven to 400 F. In a bowl stir together the sugar and vanilla. Pat down the butter onto a skillet and sprinkle the vanilla sugar on top. Place the apple pieces in the pan, circle around the edge. Keep repeating until the entire pan is full. Cook over medium heat for 20-25 minutes, until the butter, sugar, and apples have mostly created a golden brown caramel. Let it cool for a few minutes. Take the dough from the refrigerator and roll out on a floured surface. Carefully place the pie dough neatly onto the skillet (If oven safe) or baking dish, and roll the crust, sealing the edge. Poke the dough in several places. Place in the oven and bake for 20 minutes or until the apples are bubbling and the crust is golden brown. Cool to room temp and flip over onto a serving dish. Serve with maple whipped cream. Enjoy!
