Ingredients
- 10 cups wheat freshly milled
- 6 cups warm water
- ⅔ cup oil
- ⅔ cup Homey
- 2 Tbsp Salt
- 2 Tbsp Yeast
- 2 Tbsp dough enhancer
Instructions
- Add warm water, 7 cups of freshly milled flour and oil to mixing bowl. Mix well. Add honey, salt, yeast, and dough enhancer; mix briefly. While mixing at low speed SLOWLY add balance of flour until dough pulls away from the side of the mixing bowl. (If the dough sticks to the bowl add more flour, remembering too little flour is better than too much.) Mix the dough until the fluten is properly developed (8-12 minutes in a mixer). The dough should be elastic, but with a stringy texture. Shape dough into loaves and place in greased pans. Let rise on counter or in warmed oven (lowest setting) until double, approx 20 minutes. Bake at 350 degrees F for 25-40 minutes. Bread will be browned on top. When loaves are done, immediately remove from pans and let cool on wire rack. Makes approx. 4 loaves.
